  • 303g coconut milk, canned (not coconut cream)
  • cake flour (285g) 
  • ten grammes baking powder
  • 3 g salt
  • 170g unsalted, slightly softened butter
  • 300 g sugar
  • 2 large room temperature eggs
  • 4 teaspoon vanilla extract
  • 4 grammes coconut extract

  • 113 g softened unsalted butter
  • 226g (full-fat cream cheese)
  • 2 white chocolate baking bars (113.5g)
  • 12 g milk
  • 4 grammes coconut extract
  • 690 grammes powdered sugar
  • 396g Shredded Sweetened Coconut

  • Begin by preheating the oven to 325°F.

 In the meantime, grease and flour three 8-inch baking pans. If not, two 8-inch baking pans will suffice.

Once finished, heat the coconut milk but do not allow it to boil. Cut the white chocolate into small pieces and mix it into the coconut milk. Allow the white chocolate to melt slightly before stirring until completely smooth and melted. 

Now, in a mixing bowl, combine the flour, baking powder, and salt. Set aside after whisking all of these ingredients for about 30 seconds.

Now, using the mixer attachment, cream the butter until smooth. Then slowly whisk in the sugar for about 5 minutes on medium speed. Allow the batter to lighten and fluffy.

Add the eggs, vanilla extract, and coconut extracts. Mix until everything is well combined.

Pour the flour mixture into the chocolate batter, alternating and mixing them at the same time.

Make sure not to overmix the batter. Pour the batter properly into the baking pans.

Bake for 22-25 minutes at 325°F. Take the toothpick or skewer test to see if it’s done. If any of these come out clean when poked into the cake, your cake is done.

 Allow the cake to settle down at a cool temperature completely before frosting it.For about 10 minutes, place it on a wire rack.

 Cut the white chocolate bar into tiny bits for the frosting.

Place it in a microwave safe bowl and add 3 Tablespoons of milk for about 15 seconds. Mix in softened butter and cream cheese.

Whisk all of these bowl ingredients together on medium speed until smooth and fluffy. Now, combine the white chocolate mixture and the coconut extracts.

Gradually add at low speed until well combined.

Refrigerate it for a few minutes before smearing it on top of your white chocolate cake.
